SHEVAYACHI KHEER (VERMICELLI KHEER) INDIAN SWEET PUDDING

Vermicelli Kheer (Indian Sweet Dessert)









Vermicelli kheer (sever kheer) an Indian Sweet Dessert often made on religious and auspicious occasions.
Kheer itself is a very popular recipe in itself
It's a quick home made recipe within 20 min.


Ingredients:- 

1 . Ghee  (clarified butter) :- 2 tbsp

2  . Vermicelli :- 1 Cup


3  . Dry Fruits  :- (Raisin, Almond, Walnut, Cashew unsalted) as required.


4 . Milk  :- 1 1/2 Cup

5  . Sugar  :- 1 Cup

6  . Cardamom Powder  :- 1 tsp

7  . Saffron :- a pinch


Method:-

1 . In a pan heat some ghee

2 . Add the vermicelli and roast it well on slow flame 2 min.

3 . Then add all the dry fruits, mix everything well for 4 min.

4 . Add milk and again mix well .

5 . Let the milk boil completely 7 to 8 min, then add sugar and let it cook for 5 to 6 min.

6 . Add cardamom powder and saffron dissolved in milk keep stirring.

7 . Let the Kheer boil till it become little thick.

8 . Garnish it with dry fruits and serve.




Tips:-


Add some milk to saffron so that it will impart very good flavor to kheer

Try  and used roasted vermicelli now a days you get it as it does not take a lot of time to cook,
just sauté it as it is already roasted

Vermicelli on cooking sweets up.

Add milk little by little.

Keep on stirring  as milk has a tendency to stick on the bottom of the pan.

Weather you like your kheer thicken or liquid its up to you , as per that you stirring,& the amount of vermicelli can be decreased or increased , i you add more the consistency will be much thicker like a pudding.

You can also add rose essence strawberry essence and change the flavor completely but skip the 
cardamom powder .
