GAJAR HALWA




We usually make this Gajar Halwa during Winters. It's a very popular sweet dish.
I have learned this recipe from my mom , during winters she always makes this recipe as carrots in the market are very tender and juicy during winters.
This is the traditional recipe with just full fat milk , ghee and sugar to make , you won't need condensed milk(khoya) .

I am sharing the traditional  method here. But with step by step pictures.
You can use any variety of carrots just make sure to use tender gajar which lends to sweet aroma and yield a soft mouth melting halwa.





















Ingreindts:

1 .Carrots (gajar) :-  6 to 7 grated carrots

2 .Full Fat Milk :-3 cups

3 .Ghee (clarified butter) :-6 tablespoon

4 .Dry Fruits :-Cashew , Raisin , Almond as required

5 .Saffron Strands :- a pinch

6 .Cardamom powder :- 1teaspoon

7 .Sugar :-10 tablespoon

8 .Nutmeg Powder :- a pinch



Method:


1. Rinse peel  & grate the carrots.





2 . In a thick bottom pan add ghee (clarified butter)


3. After the ghee melts add the grated carrots  and  some dry fruits in the pan (not all just add some dry fruits).


4 . Stir till the rawness of the carrots goes away and the carrots shrinks in the size.


5 . This process will take around 30 to 40 min, keep stirring in between.



6 . Add remaining  dry fruits to the pan.

7 . Add milk in the pan , keep stirring .




8 . When the milk is reduced to 75% then add saffron , cardamom & nutmeg powder.






9 . Give it a nice stir.

10 . Atlast  add  10 tablespoon Sugar to the carrots mixture you can increase or decrease the amount of sugar as per your preference but this 10 spoon gives  medium sweetness not to much and not to less .


11. Add 1 teaspoon of Ghee (clarified butter) at the end this will give it a very nice texture and flavor.


12 .Gajar halwa will be ready when the milk is fully absorbed by the carrots.

 Serve gajar halwa Hot Warm or Cold.








Tips


Gajar Halva can be refrigerated for unto one week and kept in the freezer for up to a month , just warn it up before serving.

Stir often so that the milk does not stick to the bottom and burn.

It is important to buy tender and juicy carrots so that they are easy to grate.

Grating them by hand or you can also use food processor 

Do use a thick bottom pan or a iron pan for making this Gajar halwa.

Some extra hard work is needed to make this halwa as while grating and the slow cook them in stove top and keep stirring them regularly.
