White, Red and Green Gravy
Ingredients:
for grinding
1. Onion : 4 to 5 cut it into small piece
2. Ginger : 1/2 tsp granted
3 . Garlic : 8 to 9
4 . Green chilli : 3 to 4
5 .Cashew : 15 to 20
6 . Dahi ( yogurt ) : 1/2 cup
White Gravy
1 . oil / butter : 2 tbsp
2 . Garam masala : 1/2 tsp
3 . coriander & cumin powder : 1 tsp
4. Salt , sugar , black pepper : according to taste.
Green Gravy
1 . oil / butter : 2 tbsp
2 . Spinach puree : boil spinach 12-14 leaves in hot boiling water for 1 minute ,
Remove form hot water and put in cold water n then grind in mixer.
3 .Salt , sugar , black pepper : according to taste.
4 . Fresh cream or : 1 tbsp.
5 . Grated cheese : 2 tbsp
Red Gravy
1 .Butter :1 tbsp
2 . Tomato puree: 1/2 cup (2 tomato cut in small piece and remove the stem add 3 tbsp water and cook it till they are soft and then blend it till smooth puree
3 .Red chilli powder : 1 tsp
4 . Salt , sugar , black pepper : according to taste.
5 . Kasuri methi (dried fenugreek leaves) : 1/2 tsp.
Procedure :
1 . for making White gravy
Add 2 tbsp butter or oil in a large hollow pan .
add the gridded mixture to this pan ,
when the masala starts leaving oil add garam masala ,Salt , sugar & black pepper
And fresh malai (cream) let it cook for sometime ay last add 1/2 cup water and let it boil.
Then make 3 parts of it.
2 . Green gravy
Heat oil in a pan add the boiled spinach puree and according to your taste add Salt , sugar & black pepper , mix it well.
add the white gravy 1 part to the above made green gravy & add Grated cheese , Fresh cream, boil it for some time and your green gravy is ready.
3. Red Gravy
Heat oil / butter in a pan
add tomato puree in the pan
after some time add red chilli powder Salt Black pepper and kauri methi to the mixture .
after some time the puree will leave some oil/ butter at that time add the 1 part of white gravy mixture ,mix it well & your red gravy is ready.
Tips :
You can use any vegetable or meat such as Panner (cottage cheese ) , Potato, Peas , Chicken , shrimp in the above mentioned gravy.
