 Sweet Indian Flat Bread



Puran poli needs no introduction it is a most popular Maharashtrian dessert. Puran Poli is a flat bread stuffed with a sweet lentil filling made from Split Bengal gram / channa dal and jaggery . In Marathi Language the sweet filling is called as puran and the bread is called as poli. We usually make this on our every auspicious day such as Gudi Padwa, Ganesh Chathurti, Diwali, its even made during Marriage Ceremonies.One of my Favorite recipe. After trying it many times i am not expert in it. It will not be perfect if you are a first time maker after some time and practice you will be an expert.This recipe is taught to me by my mom  , i learned it after coming to USA on Skype and whatspp . I always kept bugging her every time while making this puran poli ,but now after listing to her WhatsApp voice mail hundred of time i am an expert in preparing Puran Poli. 










Ingreindts:-


1 . Split Bengal Gram (Channa Dal)  2 cup

2 . Jaggery (Gul)  1 1/2 cup

3 . Saffron ( Kesar) pinch of it

4 . Green Cardamom Powder 1 Teaspoon

5 . Nutmeg Powder 1 Teaspoon

6 . Rice  1 Teaspoon

7 . Refined Flour(All purpose flour) (Maida) 1 1/4 cup

8 . Salt pinch

9 . Pure Ghee 1/3 cup


Procedure:-


1 .Wash Channa Dal and boil it and some rice while boiling it.

2 . Drain the water of the dal when hot  and grind it on the puran yantra or on a Sieve with a masher

3 . Masher it properly when it's hot otherwise it will be dry after some time.

4 . In a pot or a kadia  add the mashed dal and jaggery into it.

5 . On a slow flame keep stirring it till it became into a soft ball.

6 . It will take around 30 to 45 min to form a soft dough , it should be sticking to your hand.

7 . Add green cardamom, nutmeg powder and safforn to it.

8 . After the dal and jaggery dough comes to soft ball remove it and let it cool for some time.

9 . Mix Maida and salt and 2 teaspoon of ghee and some water to make a soft dough.

10 . Cover it with Damp cloth and keep aside for 1 hr .

11 . Divide the dal and jaggery dough  ( puran )in to small portion.

12 . Take a smaal ball from the maida dough coat it with flour and roll it like a small pori and then
      add the puran ball in it  seal it's edges and dust some dry flour.

13 . With the help of rolling pin roll the puran poli , it should be equal on all side.

14 . Heat the Skillet (Tawa) add the puran poli on it add some ghee and cook it from both the side.

15 . Roast it from both the side .

16 . Serve it hot with a dollop of ghee (tup) and it goes well with katachi amti and potato bhaji , mi,  or it goes well as it is too.

17 . Katachi Amti is a special kind of Maharashtrian Curry usually prepared with puran poli.






Tips:-

1 . If you are trying for the first time and the puran comes out of the poli then do not panic ,add some
     flour to it and keep rolling.

2 . Roll the poli very lightly otherwise it is likely to break.

3 . If you don't want to use All purpose Flour (Maida) then you can use half of wheat flour and half
    portion of all purpose flour.

4 . If you don't have Puran yantra or Sieve then you can directly grind it on the Mixer or mash it with
     a patota masher.

5 . Jaggery can be substituted by Sugar , but jaggrey is used according to the traditional way .
